The area suitable for the production of Vastedda della valle Belìce DOP is characterized by calcareous brown soils, lithosols, regosols and vertisols and natural or cultivated pastures rich in wild and local ecotypes, which characterize the milk quality and the composition thereof, giving to the finished product its distinctive fresh flavor with slightly tangy savor.
The Climatic factors of the production area, in view of the latitude and the particular topography, appear different than other areas of Sicily, so the annual mean temp is about 16° C, for minimum of 9° C (in some years were recorded temperatures close to 0° C) and a maximum of 35° C.
Recent seasonal surveys, to be considered constant less and unusual, recorded higher average trends in summer and lower in the coldest months (January-February), thereby accentuating environmental characteristics.
